2-3 eggs per omelet, whipped with 1 TSP cream per omelet. Salt/pepper to taste and add 1-2 TSP of DRY Ranch dressing powder mix to eggs.
Brown favorite pork sausage and drain off fat (New Year’s resolution to lose weight!) Red and green bell pepper (in remembrance of Christmas past) 1 Vidalia onion
Finely chop the peppers and onions and sauté in a little butter until tender
Stir in 1 can Black Eyes Peas (for Good Luck) Add a small can of crushed tomatoes to vegetable mixture and browned sausage.
This finishes the Black-Eyed Pea ‘chili’ filling mixture (and makes enough for 8 omelets, or 2 omelets and lunch!)
Spray or melt butter in skillet to cook eggs. Once firm enough to flip, turn it over and cook other side. Then sprinkle a couple of tablespoons your favorite cheese on top of eggs and about ½ cup of vegetable mixture into the center and fold eggs over.
