1 tsp. olive oil 1 Tbs. chili powder 1 cup frozen corn, thawed & drained 1/2 tsp. salt 1/3 cup shredded Monterey Jack cheese 1/4 tsp. pepper 16 oz. pkg. frozen flounder (or other fish), thawed and drained
Heat oven to 400. Heat oil in small nonstick skillet over medium-low heat. Add chili powder; saute about 3 minutes. Remove from heat. Stir in corn, 1/4 tsp. salt and cheese. Set aside. Sprinkle the fish fillets with the remaining 1/4 tsp. salt and pepper. Place fillets in lightly greased 11x7 baking dish. Top with corn mixture. Bake 15-20 minutes or until fish flakes easily with a fork.
