1/4 cup lemon juice 2 Tbs. Dijon-style mustard 2 Tbs. soy sauce 1/4 tsp. salt 1/4 tsp. pepper 2 Cornish game hens (about 1-1/2 lbs. each) giblets removed, hens rinsed, drained, split in half & skinned
Whsk together lemon juice, mustard, soy sauce, salt and pepper in 8 or 9" glass baking dish. Place hens in mixture, turning to coat well. Cover and refrigerate 1-4 hours. To cook, preheat broiler. Lightly grease broiler rack. Place hens on rack breast side down. Broil hens 9" from heat, basting frequently with marinade 10-15 minutes per side or until meat is no longer pink near bone. Discard marinade.
