From Tigger's Recipe File:
1-1/2 cups orange juice 1 cup reduced or sugarfree apricot preserves 1/4 tsp. ground all spice 1/4 tsp. salt 1/4 tsp. pepper 1/8 tsp. gound ginger 2 cups uncooked instant rice 6 boneless skinless chicken breast halves ( 1-1/2 pounds ) In a small microwave-safe bowl, compbine the O J , preserves, allspice, salt ,pepper, and ginger. Microwave, uncovered on high for 1 to 1/2 minutes or until preserves begin to melt: stirto blend. Place the rice in a shallow 3 qt. microwave -safe dish, arrange chicken and rice . Cover and regrigerate for 4 hours. Cover and microwave at 80% power for 11-15 minutes or until chicken juices run clear and the rice is tender.

Hey, Linda... I made this recipe and froze it for my parents. They cooked it the first night Dad had chemo and told me they loved it. I am so happy to be able to do this for them and you really did help me....................... THANKS!!!!!!!!!!!!!!!! Kitty
