COOKIES 3/4 cup unsalted butter 1 1/4 cups sugar 1 tsp baking powder 1/4 tsp salt 1 large egg + 1 yolk 2 tsp vanilla 3 oz unsweetened chocolate, melted and cooled 2 1/2 cups flour CHOCOLATE GLAZE 3 cups confectioners sugar 2 tbs unsweetened cocoa powder 2 tsp corn syrup 1 tsp vanilla 2 oz unsweetened chocolate, melted 6 tbs hot water
1). COOKIES---Beat first 4 ingredients in a bowl until creamy. Beat in egg, yolk and vanilla. Add chocolate then beat in flour until blended. Cover and refrigerate 1 hour or until dough is firm. 2). Heat oven to 350 degrees. Roll tablespoons of dough into balls, place on ungreased baking sheets. Flatten balls into 1 1/2" round disks. Use a straw to poke 4 holes through center of each. 3). Bake 12 min. or until edges are firm and slightly darker and cookies are slightly soft. Cool 5 min. on baking sheets. Transfer cookies to cool completely. 4). CHOCOLATE GLAZE---Sift confectioners sugar and cocoa powder into a bowl. Add corn syrup, vanilla, melted chocolate, and hot water, stir until smooth. 5). Place half the cookies on a rack set over wax paper. Dip cookies in glaze to coat. Let stand on rack to firm and set, then serve. MAKES 48 COOKIES.*
