Baked Potato Soup (with my variations) Prep: 35 minutes Cook 6-8 hours in a Crock Pot.... 2 large Onions, chopped 3 T. butter 2 T. all-purpose flour 2 cups water, divided 4 cups chicken Broth (2 cans) 4 medium potatoes, peeled and diced 1 1/2 cups mashed potato flakes (instant mashed potatoes) 1/2 lb bacon, cooked and crumbled (I cheated and bought the already cooked kind and cut it up with kitchen scissors). 1 tsp. Pepper 1/2 tsp. salt 1/2 tsp. dried basil 1/8 tsp. dried thyme 1 cup half-and-half cream Garnish for the top: Shredded cheddar cheese (I use Kraft, Fat Free) green onions, sliced (I cut them with scissors) ---In a skillet, saute onions in butter until tender. Stir in Flour. Gradually stir in 1 cup water. Bring to a boil, cook and stir for 2 minutes or until thinkened. Transfer to a 5 qt Crock Pot. __Add the broth, potatoes, potato flakes, bacon, pepper, salt, basil, thyme and remaining water. Cover and cook on low for 6-8 hours or until potatoes are tender....Stir in cream, heat through.....Garnish each bowl with the cheddar cheese and chopped green onions..... OH boy, this was really good........

I am going to copy this and try it when I get the time (the urge). It sounds scrumptious!
What makes me laugh is that you said you "cheated"!!! I will too. I use the already-cooked-bacon a lot of times!
